Your new job responsibilities 

As the new Sous Chef, you will be responsible for a variety of key responsibilities including: 

  • Overseeing food production for breakfast, lunch, and afternoon tea, room & dinner service.  

  • Organise and manage nutritious and healthy options for team meals daily.  

  • Manage stock control and food wastage. 

  • Ensure implementation of health and safety and other legislation.  

  • Actively promote and utilise, herbs, fruits and vegetables from the hotel kitchen garden.  

  • Kitchen brigade development and training. 

  • Liaise with other departments and attend regular meetings.  

  • Monitor competitors and be aware of current trends & implement ideas. 


Your personality, experience and qualifications 

The role requires a talented and ambitious Sous Chef, ideally with previous experience in a fine-dining establishment. You should be an individual who embraces the ‘field-to-fork' ethos, as well as someone who wants to escape the city and embrace the breath-taking countryside the Scottish Highlands offers.
